Rice, Corn and Cheese Casserole
(from Jane Brody's Good Food Cookbook)

3 cups cooked brown or white rice (1 cup raw)
2 cups corn kernels
1 sm. onion, finely chopped (1/3 cup)
2 cups (more if you like) grated cheese (Colby, Cheddar, or combo - even mozz. can be thrown in)
1&1/2 cups milk
1 tsp. salt
1/2 tsp. chili powder, or to taste
1/4 tsp. black pepper

In a lg. mixing bowl, combine all the ingredients except paprika, and mix well. Pour into a greased 2-qt. casserole. Sprinkle with paprika, and bake in a 350 degree oven for 40-45 minutes. Serves 6-8.
