This recipe is
great on burrito wraps with sour cream, lettuce and tomato or salsa. Mmmmm! Easy
and inexpensive to make. This is from Sue
Gregg's Main Dishes cookbook.
Lentil-Rice Casserole
3/4 cup uncooked lentils, green or red
1/2 cup long-grain brown rice, uncooked
1/4 cup minced onion, instant
or
1 small onion, chopped
3 cups water w/ 1 tsp. Sue's Magic Seasoning (or
chicken broth)
1/2 tsp basil
1/4 tsp oregano
1/4 thyme
1/4 tsp garlic powder
Preheat oven to 300 degrees.
1. Blend together in a casserole dish.
2. Cover and bake for 2 to 2 1\2 hours at 300 degrees.
3. During the last 20 minutes of baking, top with 1/2 cup grated cheddar cheese.
4. Just before serving, stir to blend cheese. If desired garnish with a handful of minced fresh parsley.
